Crock pot- Chicken poato soup =============================== - 1.25 lb chicken breast - 1 yellow onion chopped - 3/4 cups sliced carrots (could easily add a lot more) - 1/2 cup chopped celery (don't do too much) - 3 cloves minced garlic - 5 cups russet potatos - cubed (could do more) - 3/4 tsp salt - 1 tsp ground pepper - 1 tsp dried thyme (maybe use less) - 2 bay leaves - 4 cups chicken broth - 1.5 cups heavy cream - 1/4 cup all purpose flour - cheese for topping Instructions: 1) Add ingredients up to chicken broth (Chicken, veggies, seasonings, bay leaf, broth) 2) Cover and cook high 4 hrs or low 8 hrs 3) When time is up, discard bay leaf. 4) Remove chicken + shred with forks 5) Whisk flour + heavy cream until smooth + pour into soup 6) Put chicken back in soup + stir 7) Cook 30 minutes more covered 8) Serve warm with shredded cheese on top + sprinkle of ground pepper (chives if you want too)
